Default RHS Tall Deck Build

I would like to get some feedback on a tall deck build to be used in a road racing environment. Here is what I am expecting to use:

RHS Tall Deck with a 4.125" bore
Callies Magnum crank with a 4.250" stroke
Dyer's rods (6.400")
JE pistons (13:0 to 1)
LS7 Heads
Fast 102
ZR1 Clutch

Any suggestions on what cam would work, if we were going to have a redline of 6500 rpm and looking for a high flat torque curve as we are keeping the stock gearbox? Hopefully we can shoehorn this motor into a C6Z06. We plan to
run the car on 93 octane, E85, and race fuel using 3 different tunes. We understand that the 93 octane tune will have to be very conservative and will only be used for occasional street driving. Is this too optimistic to think we can achieve this with this high of a compression ratio?
