Oil in the water

Default Oil in the water

Been scratching my head on this one...

I put an LS1 in a 04 GTO about 1 month ago. The car was losing oil somewhere but it was not leaking on the ground and the bottom of the motor was dry. It would lose about 2 quarts a day...

The plugs fouled out pretty quick with oil, I found out I hooked up the PCV system wrong so I just put the LS1 style PCV system on the car and now everything is working great and no longer losing oil.

The car is at a body shop now and when they pulled the Water reservoir off they said the water looked like Jello and was full of oil.

The car never ran hot; it actually ran cooler than what it usually ran...

My question is, how did the oil get in the water? There is no water in the oil...

I do not see it being a blown head gasket or cracked block. If it was then there would be water in the oil when the cooling system pressurized
