Its been a few years since I changed injectors. I have HP Tuners 2 bar SD operating system.
Currently have 60# injectors.
New ones are 120#

Would just changing the injector flow rate be all thats needed? What about the values in the VE table?

Technically if you get all the injector data right, there should be very very minimal VE tweaks...but you can't always get it perfect. The IFR table needs to be changed as well as the offset/adder tables.
