Default 160 degree thermostat-do i need to tune for this

this is a newbie question but new to ls1. do i need to change the ecm for a 160 thermostat, fan on off points or anything

From what I heard the fan does need to be re-programmed in order for them to come on sooner.

Yeah. My brother has been driving his for a long time without any tune. It just never made a difference with the engine temp.
