Fluids help!

Fluids help! Ok so my car has been sitting apart since about November and I need to change all of the fluids now that its finally coming back together. I know I could search for this stuff but I want to get more opinions.
My question to you guys is what kinds do you use and how much do i need for each?
I need to change the diff fluid for my 10 bolt, the trans fluid for the T-56 and the coolant.
I'm also going to change the fuel filter while I'm at it. What kind do you guys go with?
One more thing. How often do you guys usually change each of these?
