What kind of timing do you run WOT on E85?
Could I afford to add more timing during WOT?
On a 98* day, made 810rwhp on 21lbs on 14* timing. I'm wondering if I could add more timing and make simular hp on less boost while still keeping the tune safe. Would 18 or 20* of timing be considered pushing it on my set-up?

I think there is a guy with a GT88 right now running e85 on 28psi and 20* timing if not more IIRC. I think he may have used up to 24*. I'd start bumping it up 2* at a time. More timing will hit the tires harder and make the turbo spool faster and harder. Less timing or the same amount of timing and more boost is easier on the motor itself but will be less responsive. You have to find the happy medium and be happy with the performance yourself to know the answer to your question.
