Can a 5.3L Wiring Harness be modified to work with an F-Body LS1 (Car and Engine)?

Yes, you will have to change injector plugs to ev1.

You will also have to swap some of the pins at the pcm connectors and may have to add a connection for the IAT sensor and a different maf connector. The knock sensor connectors may also be different. I went through this with my 85 SS and it's not a project for the faint of heart.

I'd like to know how to do this as well if it is more cost efficient than buying another harness. I would like to keep my stock hood on my 2nd gen camaro if possible.
