Default Compression on 91 Octane.

Im going to be getting a set of heads soon and would like some insight on compression. Here in Maine we only get to play with 91 octane pump **** so my question is how much compression can I run before I have to start backing off the timing. I would like to run 11.0:1 static compression. I realize my dynamic compression will be the big factor, I have an EPS 226/234 .598/.601 camshaft in the car now, obviously that will bleed off some compression but I don't know how much. On another note would it be better to get my heads milled to 60cc chambers or 62cc chambers and get the 0.040 headgasket?

I'm running 11.4:1 in a 408 on 91 in Las Vegas (2000ft elevation).
