Default Reflashing ECM

I have a '68 Camaro and I am putting a 1998 LS1 motor into it. Getting ready to have the ECM reprogrammed. Just wanted to make sure of a few things first.
I spoke to the tech at Painless wiring and he said the number one fan should be programmed to come on at 220 degrees and shut off at 0 degrees, and the number two fan should turn on at 230 degrees and turn off at zero degrees. Is this correct? It sounds to me like once the fan turns on it will just run continuously.
Also, what is the recommended programming for the idle RPMs? Again, I spoke with the tech at Painless and they suggested 600RPM, but that seems a little low.

Would appreciate any help. I only want to have this flash done once.

* Motor has LS-6 CAM, but other than that it is completely stock.
