Default Old Fuel = Slightly inconsistent Idle?

My project is not yet driving because I am waiting on a drive shaft. I put in about 5 gallons of premium (91) a FEW MONTHS AGO and have been starting up the stock LQ9 a few times a month just to burn up the fuel and make sure she is still alive. I am down to the last gallon of the old fuel and have noticed she idles nicely around 800 but then kicks up to 900-1000 pretty regularly... Its not because the fans are kicking on because this occurs before reaching operating temp. Can old fuel cause this? I could test it by putting fresh gas in her again but I am not ready for that yet... Any thoughts?

Fuel psi is when this occurs? 1 gallon left could be causing aeration due to low tank level...
