Default What PSI should I run?

The car came with "Run Flats" The sign on the door post says 30 PSI. I no longer have "Run Flats" So my question is:

What PSI should I be running?

The max rating is not meant to be a default pressure recommendation for every/any application using said tire. It is simply what it is..... max pressure rating for that tire.

To the OP, what car are you asking in regards to? Since you mentioned run-flats I'm guessing some kind of Corvette? I'd probably stay within ~2psi or so of the factory recommendation, assuming you are still using a tire size that falls within the recommended section width range for your rim width.

You use what the car says on the sticker. Air expands when heated. Your tires will heat up the air. Take my Cruze. It starts out at 35psi in 80 degrees when driving they go up to 38psi. Now if max tire pressure is 44psi (BFGs) and you put 44psi in them they will rise over the max and you are just waiting to blow a bead.
