Default LT1 Motor Plate for Mustang

Did a little searing, but couldn't find much. Putting my LT1 from my Impala into my 96 mustang. Chassis is done in the mustang, all tubular front, and my K-member is made for accepting motor plate, not standard motor mounts.
I know Thunder Racing makes motor plate that would fit F-bodies, but wasn't sure about other cars. Also read somewhere that S&W makes motor plate, but couldn't find anything on their website about it.
Also with the way the water passage is on the water pump it seems like a standard SBC motor plate wouldn't fit.
Are there any other options, or making the one from Thunder Racing fit?

I have a steel one with arms that go back up to the motor mounts.

Would I want to run an off-centered motor plate? I've read everything comes off centered, and really only tube chassis cars need centered motor plate other wise you run into clearance issues in the trans tunnel and such

I'm doing it more as a weekend car, but also will have track time. Never in classes, just more of an expensive hobby. Did some reading on YellowBullet and people recommended Skinny Kid Race Cars for a SBC motor plate that fits stock mustang frame rails. Also with the off-centered mounts so motor will fit where it belongs and not have to cut or bend any sheet metal.
