Would it be ok to take off the OEM ground and run my 1/0 cable from there (location is the large stud next to the motor mount bracket) to a spot on the body underneath the coolant catch can? I was going to drill a hole, grind paint away, and install with a large (1/2" bolt and nut)?

If you grind away the paint and assure that you have bare metal to metal contact, it should work. Just make sure you tighten both ends down because a loose ground can cause major headaches.
