Default Thermostat and fan temp setting questions

Got a couple cooling questions for you guys, first off my car is a 71 cutlass bone stock LS2 swap with a new stock replacement radiator and ford windstar dual electric fans. First off what temp thermostat comes in the motor from the factory and would I gain anything going to a 160 degree thermostat ? Second based on which thermostat I use what temp on and off should I get my fan controller and why ? I plan on getting a preset fan temp switch and running one fan off of it and then running the second fan off a switch in the car.

First off, disclaimer, I am no pro at this , but I will tell you what I know. The factory Tstat is around 205-215 and this is for emissions . A cooler engine usually runs better ,so unless you are running cats a cooler T stat is better.
I have a 160 T stat in my LS3 and the fans are set to come on at 175. This allows the water to circulate through the engine before the fans cut on. The goal is for the fans to cycle on/off instead of staying on full time. I hope this helps.

I run a 160 t stat and leave the fans on. The stock t stat is a 190 I think, may be 185. My stockers ran at 190-195 in the summer, so they cannot be any higher than a 190.
