I think it has a lot to do with tire technology and weight savings - granted a lot of cars these days have insane power numbers in comparison.
That AC Cobra would place 10th on the modern muscle list, and the 66' 427 'Vette in 20th, door to door with an 09' GT 500 and a couple of SVT Cobra's.
I wonder what the classic numbers are based on, whether they're period correct #'s with old tires or period-correct cars with new tires.
I assume period correct #'s with old tires since they're pulled from magazines of the era.

The abilities of the magazine test drivers also are a factor in both the old and new numbers. For example, my '65 L79 car only had one magazine test back in the day. They posted a 16-flat with 3.70 gears. In my own personal version with 3.31 gears and as bone stock as the day it was built I turned a 15.2 on decent mid-1980's radials and 14.92 on small slicks and I've only been down a drag strip maybe a dozen times. I had the advantage of better tires but worse gears and probably less experience and I still did noticeably better. I've actually found my car does okay in a straight line on the reproduction original style tall bias ply narrow-*** tires.
