Default Coverter and gear suggestions

Moving along with my 96 Mustang stock 5.3/LS6 cam/TH400 and I'm at the point where I need to make a decision with a convertor and rear gear. This is mostly a weekend toy/some track time. I want a responsive street combo first and foremost, and the track times will be what they be.

I have two 8.8 rears, one with a 2.73 and the other a 3.27. Which would be better? I was going to run a 26, 27, or 28" radial so that is still open?

What's a good convertor in terms of stall? I think stock48 runs only a ~3000 stall? That or lower seems like that would be great for the street.

With my mustang same set up I got an 80mm. In my 8.8 I have a 3.55 gear and I just picked up a 3600 stall converter
