Default Head gasket question

Do I use the steel 12498444 or graphite 12498543 as I have a set of both. Setup is a D1 with approx. 10 psi . Any help or reasons would be greatly appreciated.

Whats the down fall of using the graphite ones was thinking they would help with the seating surface since the heads came off a different engine and didn't have them shaved any,and yes using ARP bolts.
