Xsta Z 28 summed it up best - you want as close to +50mm offset as possible with the ZO6 wheels. The key will be finding them - definitely do your homework and make damn sure you know what offsets you're getting. I can't believe how much misinformation and variation there is out there with regard to ZO6 wheels.
FWIW, Dante makes a very nice replica wheel and you can get their ZO6's in +53mm for both the 18x9.5 and 18x10.5 sizes (they made +50mm's for a short period, but these were discontinued). Unless you're really lucky you probably won't find any in a +50mm offset. IMO, anything larger than +53mm (e.g. +56mm, +57mm, +61mm, etc) is too much for an F-body and will look too "tucked in".

I have +56mm all the way around and I didn't have to do any hammering. If I try to put the rears on with the suspension fully unloaded, they will hit, but it isn't even close with the suspension loaded.

My rims are 18 x 9.5. Tires are 275/35/18. My car is lowered using DMS springs. (Similar to Pro-Kit).
By "unloaded" I mean that if you jack the car up and put jack stands under the frame rails and let the rear end hang all of the way down. If you do that, the sidewall area of your rear tires is going to be very close, if not touching your bump stops. Now if you just jack up the rear of the car directly under the rear end, the suspension will remain in it's "loaded" position, and the sidewall area will be way above the bumpstop area, giving you plenty of room to get the wheels on and off. This, in essence, is the functional position of the wheels anyhow. My wheels did hit with the suspension "unloaded", but in order for this to happen under road-going circumstances, I would have to get airborne....and I would probably have more serious problems than just having my rears hit the bump stops.:o
