pics of 10" pro star rears ON car/ stick out? get 8"?
I am wondering which to get for the rear 15x8" or 10" pro stars, I am thinking the 10" will stick out too far and may hit the fender on hard acelleration?

An 8" rim with a 5.5 bs dosent stick out any further than a 10" rim with a 7.5 bs. The 10" rim is 2" further in. Thats where the difference is.

You should consider the weight of your setup, and not just jump into that big rim unless you really need it. If you think you do, then I'm sure it will work great. A 26X10 E/T Drag is a lot of tire though.
Just in case you wanted to see a 15X8 with 5.5 backspacing here is a picture of my car with them.
This is with a 5/16 spacer and 26X8.5 15 E/T Drag (stock ride height too).

the rears will basically be for street and I'll use nittos most likely. I will be running et streets this year on stock firebird rims to race and for nights of street RACING!

I run 15X10 w/7.5 BS Draglites on my TA with no spacers on the rear. I had to grind the calipers quite a bit. Big weight savings but I can't remember how much exactly.
