First off, my 99 SS has a ton of miles (122k) but has been babied for much of it's life...til I got it that is. I understand that oil thins out in the summer but I don't think it should affect my oil pressure this way. I've noticed the pressure goes down below the halfway mark at idle when hot. It is hard to judge how low but I think it's around 35 psi. How low is too low and should I be worried?

That is completly normal and not only that the gauge is nothing more than a dumby light they are not at all accurate. Unless it goes down really low I would not be too concerned.
