Get a grant part #3196 (adaptor) You can get the nicer alum version as that one is the rubber covered one.
Then you can pick whatever grant steering wheel you want.

Re: What's involved with a new steering wheel? Ditto... You may need to use some washers behind the adapter to space it out from the column a tiny bit so it doesn't rub while turning.
