MAF delete?

MAF delete? I was looking at the Starr performance 3.3L Whipple kit and I noticed it had a maf delete option and a different map sensor. What does this do to help them tune the stock ls1 PCM? Does anyone know if the starr system works and if so why havnt the tuners in the states been doing the same?
