My thermostat comes out of the housing with a little twist.

So back to the question. Can I just buy the thermostat?

Where should I go for a 160 thermostat locally?

I think all LS1 thermostats come with a housing. Now if you are looking at dropping the temperature of your existing thermostat, I believe you can place a spacer (1/8" brass compression fitting IIRC) in there to bring it down. There should be threads describing how to do this.

I understand the housing thing, but the thermostat comes right out of it easily. Itook the thermostat out of mine to boil it. I was just wondering if I can buy a 160 thermostat to pop into the housing.

Or do I just go to Thunder or someone and buy the whole damn thing and call it a day?

That would be easiest.

I found out where I read about it. It was in my LS1 Hi performance book. Placing a 1/8" brass ferrule will adjust the thermostat to open at 168 degree. It still easier to just order the thermostat though

on some of the newer ls1s like 2001-2002 Ive read that you need just the t-stat because the water pump is different. I havent tried it yet but I know you can just replace the t-stat and keep your housing.

I thought that was only on the 2004 Corvettes and GTO, maybe not.

I dont remember let me look around for the post. It was a few months ago. A member asked what was up because they had a problem with the t-stat and housing that they got. I remember a shop owner posted and said that they had never had a problem but then a few days later they posted up saying that they did one and found the problem to be the water pump. They fixed it by just replacing the t-stat. Ill search for the thread and bump it if I find it.
