Default Tuning basics

Sorry for the newb inquiry but I am looking for some tuning tips using LS1 Edit. I did a search and it appears most of the info on this site is for folks with at least some tuning experience. I have logged data and know I need to recalibrate my fuel maps as I am running +5 to 10% ltf's. According to LS1 Edit (users guide) I should change my VE tables but not the MAF while other info I have read speak of changing the MAF but mention nothing of the VE.
Any good links to some "LS1 Edit Tuning For Dummies" would be great.
BTW, this is for a 94 rx7 with an 02 LS1/T56, long tube headers, 3.5" single exhaust, no cats, CAI, TR224/112.
Also, flash files for set-ups similar to mine would be greatly appreciated and useful as a starting point.
