Default Low CR, 91 octane guys - What's Timing Curve Look Like?

Just wondering . . . on the Incon kits, there was no tuning for 5psi, factory timing tables. Now I've got a 370ci with 8.7:1 CR and 91 octane at the pump. What kind of timing should I have down low? Currently have it set @ 19 around 2500-3K. If the car ran fine with full timing @ 5psi, why can't I have full timing at least until it hits 5psi? Wouldn't that help things get going quicker, and give it more low-end grunt?
