160 t-stat, when to turn fans on?

Default 160 t-stat, when to turn fans on?

Just a dumb question I've had in my head and never got around to asking it. I have a 160 degree t-stat and the car still runs aroun 205 degrees. When are you guys turning your fans on/off at?

I use the SLP fan switch. I usually turn the high fans on when it gets to 200+ temp. Yet, it only gets that high when I am in interstate traffic.
