I've wanted to do this swap for years now, and after the research I've done you're going to spend about $1500-2000 for parts, all depending on how lucky you are finding a setup. There's some salvage yards around that sell all-inclusive (so they say) kits that include everything to do the swap. I'm hoping to do this swap in the next year or so, and I'm going to budget around $2300 and a fukin ton of time!

Edit: There's a conversion kit w/14k miles on ebay right now going for $1700. Should give you an idea of what you're looking for.

I spent right at 2k for the complete swap. That included a brand new findanza flywheel, spec 3 w/pressure plate, all new hydolics, new throwout bearing and pilot bearing, and I had my tranny rebuilt as well. You can do it for cheap, you just have to be patient and wait for a deal to come around.

mustang parts are quiet a bit cheaper than ls1 parts. You also have to remember that the majority of the stuff I installed was brand new. I could have cut costs by installing used stuff but that kinda defeats the purpose of the swap.
