Default simple tranny tuning question

When changing the base shift pressure you change pressure vs. torque. The table at the top that represents torque is from 0 to 640. My question is how do you know what value of torque the car used for its shift. I could understand if the torque variable was replaced by TPS %. I look at my gragh and see that my base shift pressure is 24 @ 220 torque in 1 gear. How do I know when the car is experiencing a torque value of 220? when I log I never see any torque readings over 300. Working on a 99 C5 with HPT.
