Default Your Input on my exhaust valves hitting piston!

I just pulled the heads of my car after getting low oil pressure and excessive valvetrain noises. I found several issues and one of them being the exhuast valve hitting piston. Sure glad I pulled this thing apart before taking to dyno. I notched the piston on the intake side but was told I didn't need to do the exhaust.

I have the following setup.
G5X3 LG Cam
Patriot P Stage II LS6 heads 11:1 compression 1.6exhaust 2.02int
PP told me they do mill head but just to clean it up .003 to .005 pass
.55 headgasket thickness

It just barely hit the piston not even a .001 of an inch but it still hit piston. Engine ran not even more than 20 miles and nothing beyond 4000rpm.
I checked for bent valves and they seem ok no leaks. Checked pushrods and they seem good.

What else do I need to check?
Should I go ahead a replace exhaust valves? Even though I can fill exhuast port with fluid and doesn't leak out.
What size flycutting tool do I need for a 1.6 size valve? 1"5/8 ??
