If we have to do all this driving and logging data to tune are cars, how to tuners tune them without ever seeing the car?

they eyeball it, use tunes from cars they've done before, some things are are just calculated...either way, they're no good, our cars are over-modded and under-precised (is that a word? well, it is now) to stick 'one size fits all' tunes on it.

the mail in tunes bascially use already effective tunes with similar mods and adjust it to get it close to your app. the tunes can be really close depending on who you get it from, but it won't yield the absolute best power and drivability
