What are the disadvantages of using a bigger valve on the smaller displacement motor?

By no means 370 is small displacement. 2.08 will be fine on that motor. As a matter of fact I wouldn't use anything smaller than 2.05's. That motor will move some good amount of air. Bore size will not shroud the intake valve.

alright. I already bought the heads, but then i was reading about most people going with the 2.55, and i wasnt sure if there was something wrong with goin with 2.08s. Also, Is there a writeup on the molding clay method to check valve clearance?

Clay is innacurate for the size of cams that some of us put in there.
The most accurate way is to use a dial indicator method.

Could you elaborate how to use the dial indicator method. or provide a link with a write up?

How much clearance do you think you can have with 2.055 intake and 1.57 exhaust on a stock LS1? What size cam would fit?
