I have a Monterrey red camaro and am pondering the same thing. problem is the seats stick up, and some of the interior trim also sticks up past the belt line (what is visible looking from the side).

In the end I think it would just look funny. Unless you could find some crazy bastard looking to swap interiors, it just doesn't seem like it would look right.
