Is it possible that you didnt tighten the stat housing down enough? Thats a good amount of pressure and fluid going through there.

Did you check the T-stat housing for leaks or is it leaking from the pump? Is a hose clamp loose, did you put a hole in a hose during the install, etc? No one can do the final trouble shooting over the internet.
My money would be on the T-stat housing or something that you worked on recently, since the trouble started right after a repair. Since an LT1 water pump is not driven from the belt, I believe the belt install is a non-issue.
Good luck!

You need to bleed the system after you install a thermostat. That little bit of air in the system will produce the loss of coolant you describe. I've been through that twice.

Make sure the water is in fact coming from the pump first. And yes you need to bleep the system. Air pockets can take out your water pump bearing.
