are Ceramic coated headers worth the money and why or why not

With ceramic you'll get a good head start on rust. without coating if you live in an area that gets snow regularly during the winter and rain during summer time your headers will rust quick. Keep in mind that it's just surface rust at first, but with ceramic it'll last a decent amount of time longer.

Plus ceramic looks hot

if you wanna replace your headers after a couple years get the non coated ones.

One of the reasons for the coating is to act as a thermal barrier, helps keep the heat in the headers instead of in the engine bay.
The other reason is corrosion prevention (tho in Texas you shouldn't get much snow/salted roads)
Get the coating it works to keep the headers from looking like ****, at least for a while (longer than uncoated ones)

there are some things you can skimp on. header coating should not be one of them. besides, it isnt that expensive. it makes no sense not to get them coated. like 98Z28MASS said, get the pacestter/ory deal going right now from several sponsors. pacesetter makes a really nice header

coated is the way to go, non coated will look like **** in no time. I love my pacesetter set up, and tsp ory.
