What's the best way to pull fuel out of the mid-range (too rich)--dyno sheet attached
When you stomp on the gas my car lays out a bunch of black smoke. As you can see in the dyno graph it happens in the 4600-5400 rpm range. I have tried the PE vs RPM but it only seems to make a change past that point. Any suggestions.

Double check your fuel settings to make sure you don't have something wrong in your IFR or offset/kpa/volts tables. If that's OK, I'd look at rescaling the MAF in your problem areas.
My SC'd LS1 was reading leaner than commanded from 4800-redline. My fueling was stable, so I added 10% to the MAF in those cells and now commanded=actual within a few tenths.

I would check the log file for manifold pressure, grams/cylinder, and MAF output, and then start making changes in the VE table first. I'd only try the MAF table second if no results from the VE. I'd put the PE table back like you had it.
Keep in mind there's usually more than one way to approach problems like this.

So I should try playing with the VE table? When I first had the car dyno tuned the tuner intentionally fattened it up in that range to "attack detonation" as he said. I'm just not sure exactly what he did and now they are out of business.
