I just set mine up to sit at 80*C (176*F)
The 160 starts opening at 160, but isnt fully open till 175.

Which is FAN1 (Sorry I like my precision decimal places!)
176.632813 ON
174.804688 OFF

FAN2
187.390625 ON
180.148438 OFF

Tracks 80*C nice and close in 80*F (28*C) weather.

I tried a different search and found info this is what Hypertech sets it with does this sound good?
Stock Cooling Fan Temperatures:
Fan 1 on/off at: 227°F/218°F
Fan 2 on/off at: 235°F/228°F

Hypertech's from their instructions for the HPP3.

Stock 195° thermostat
Fan 1 on/off at: 209°F/200°F
Fan 2 on/off at: 219°F/210°F

180° Hypertech PowerStat
Fan 1 on/off at: 194°F/185°F
Fan 2 on/off at: 204°F/195°F

160° Hypertech PowerStat
Fan 1 on/off at: 184°F/175°F
Fan 2 on/off at: 194°F/185°F

I use those 160 settings, fans run a lot here in the Florida heat. James at RWTD recommended the same ones a couple years ago. I'm thinking of trying the 180 settings.

If you run the fans full blast, full time, your engine temp
will never be below about 173-175F. Where do you want
it to be?

My personal preference is to maintain a very tight ECT
range so I can tighten up fuel and spark. So I have the
low speed fans on/off at 177/176 (knowing my particular
thermostat tries to maintain 175, by the scanner) and
high speed at 179/178. If it's having any trouble holding
down, fans, now. There is a fan disable speed that will
keep low speed fans off when rolling airflow is adequate,
so you don't wear them out any faster than necessary.

I like cooler operating temps, a lot of people think it's
better to keep them up higher but if you do, then just
keep the stock 'stat and set the fans for that (194F or
so).

Realize that down south in the summer your stock LS1
radiator becomes the weak link, especially if you run
the A/C, and no fan settings will make up for low core
coolant-air surface area if the incoming air is near your
thermostat temp.

I intend to swap in the LT1 radiator I got, and when I
do this I will also be running the fans from an electrical
thermostat on the water outlet, so that I have a 160F
or lower coolant temp in the tank. That way the engine
coolant thermostat has authority in reserve and doesn't
have to count on the fans playing catch-up. With "cool"
water the engine 'stat is in control. With the stock
scheme it can only set the minimum operating temp and
has no control over the max at all.
