Default LS6 Intake swap - Oil pressure jumpy

I broke my oil pressure sensor removing the old intake so I installed a new one when I put the LS6 intake on. My guage reads oil pressure but the needle had a "delayed reaction" and is jumpy when moving and not smooth movement like before the swap. Do you guys think I over tightened the sensor or didn't get it in good enough? I didn't have a torque wrench or torque specs so I just snugged it up good.

What I mean by "delayed reaction" is I'll do a quick rev and the needle goes up but it probably takes 5 seconds or more to come back down (jerking down) and the engine is just idleing the whole time.
