Default Engine prep ?'s

I just bought the motor that will be going into my T/A and I had a few questions:

What should I do/replace while the engine is out? I.e. head gaskets, intake seals, etc.

I was thinking about flycutting before I installed it because I will be putting a setup on it that will require that to be done, with this hurt the motor under normal operating conditions? I would just like to do it now so it's easier.

What is the best way to put these beasts in? I have heard from the bottom but I dont really have access to a lift so I think I will just seperate the engine/tranny and put them in old fashion style. Any other ideas?

Thanks ahead of time for the advice. Also are there any kits for a gasket set?
