well, getting air bubbles out of the cooling system, jack the front end up so the radiator cap is higher than the engine block, take the cap off, and turn the car on. Let it get to operating temp and the bubbles will work their way out. add coolant as needed to replace the air.

can't say for sure what the other problem is but it sounds like a bad ground on the engine.. probsbly a head.

Did you get the head gaskets put on correctly as far as the correct side up so that the water jacket holes are in the right place?

as far as your gauges resetting them self, check to see if your battery is secure... because mine did the same thing when my batter hold down up front broke and the battery would hit the inner fender right there and the car would pretty much die for a second. As far as the cooling system goes do what Asmodeus said, except i dont jack the car up. when it seems full, put the cap on and drive it around the block or something but dont go to far because there still might be air pockets. let it sit and cool down pull the cap back of and top it off and you should be fine. You might have to do that once or twice as well.

That sensor you broke is the same one that I broke when torquing my heads down. If its on the front of the drivers side than its cyl. # 2 and that would be the water temp sensor.

The sensors are cheap and you can get them at autozone or advance. I would buy a new one just to be sure that it's not your problem. If the coolant temp isn't reading correctly it can screw up a lot of stuff since many of the tables in the PCM reference the engine coolant temp. Hope this helps.

On the guages resetting, my SS did the same thing and it turned out to be the main hot from the fuse block under the hood being barely loose. The engine would lose power, the gauges would all reset along with all monitoring lights ect. It did this about once a week and drove me crazy for a month or so. The wire had slightly fused/welded itself to the stud and felt tight but it would get hot and come loose once and a while. It had to have been left loose from the factory.
