LTFTs are built off STFT corrections. As the LTFT moves closer to it's learned value, the STFT correction will be less active (hence why it tends to settle around 0), unless you are excessively rich or lean. The LTFT stays at it's learned value until the PCM detects a change in A/F production. The immediate response is to employ STFT corrections until the LTFT value can update.

Even if you don't reset fuel trims, given a 10 minute drive time, you will still notice all fuel trims updating unless your correction was not of any significance. Fuel trims learn pretty quickly, resetting simply allows the adaptive process to start from ground zero.
