COT = Cat Over Temp protection. What this does is adds extra fuel (enrichment) to the intake mixture during WOT, this extra fuel helps cool down the catalytic converters. They heat up rather quickly if the AFR is leaner then 13.0, by running extra fuel (like 11.7 in most cases) it acts like a coolant for the cats. If you have cats, you will may want to keep it enabled ... if you do not have cats, you need to disable it.

If you don't disable COT protection, you will go about 1 ratio richer about 8 seconds after launch. It will show up on a datalog of a 1/4 mile pass. You can leave it disabled on a car with cats if you don't plan to run the car up to full speed and leave it at WOT for 20 seconds or so. You will have to disable it to get the WOT AFR right for the full run.
