I did the "poor man's" way...
I removed the power steering pump, and looped the two hydraulic lines from the steering rack back to each other.
Total weight loss isn't much (7lbs?), but every little bit adds up, the PS pump eats up HP (again, not but a tiny bit), and it cleans up the engine compartment a bit.
No doubt a true manual rack (like Madman sells) would be better all around, but they aren't cheap.
