Default Timing Issue........Any Ideas?!

I've been trying to track this timing problem down for months now(yes months)and I'm getting closer I think.The problem is that when I hammer on the throttle from a dig the PCM pulls back timing to around 3 degrees and then it slowly climbs back out of it.Everyone thought it was in the tune until I showed many good tuners my file.Well I finally decided to try something myself after everything seemed to be pointing to the maf.I had purchased a brand new GM Z06 maf with the short adapter plug conversion I bought from Speed Inc.I took that off and put my stocker back on and what do ya know,didn't pull timing at all.Now my question is.......do I have a faulty maf,or do I just need to change the maf tables or airflow tables in my tune to adjust to the different size maf?Car is a 2001 Trans Am with a built 427 just for a background. May have been a bad MAF, but the MAF curve does need tuned.
