Default coolant level drops when fans kick on

I recently installed a Heads and Cam package. I have a 180 degree thermo and a throttle body bypass. There is no smoke coming from the exhaust, no coolant in the oil (oil level doesnt rise) and no visible leaks.
I can drive the car on a long trip at high speeds and the level will remain the same but as soon as the high speed fans kick in the level will drop.
Can anyone help me out its driving me crazy.

You're not talking about the low coolant level light on the dash right? Fan speeds operate on the ECT temp, and temp settings in the PCM, don't see how that would actually lower the coolant level. Maybe an air pocket in the cooling system?

No I can sit there with the radiator cap off and watch the coolant drop when the high speed fans come on. What is ECT?
I have added a gallon of dexcool in the past week and have barely driven the car.

If your car is tuned, the fans are probably set to come on at the same temp the thermostat opens. Your fans coming on has nothing to do with coolant level.

That would make sense, when my thermo opens the fans kick on the coolant rushes. How much coolant does an LS1 car hold because Ive added a gallon already?

Sounds like air in the system. I got the air outta mine after a t-stat change by sqeezing the top hose repeatedly. PITA. Read somewhere on here the other day where there is another small hose somewhere on the radiator you can disconnect and it will purge the air. Not sure if this is right but I will look when I go outside.
