Default Running temp question

I have an LS1 installed in a project and new to the whole GenIII engine. I'm wondering what "normal" operating temp for these engines is. I've been told that the thermostat starts to open at 195F and they can run between 220-240. My limited experience is showing a just idling engine in a cooler climate (about 40F last night) went consistantly up to about 240F. The radiator was just starting to warm up near the inlet and was mostly still cool, so the running fan (from PCM) was not doing anything. I saw an aftermarket 160F thermostat and was wondeirng if anyone has installed these and operates their engine at a lower temp. Anything wrong with running an LS1 below 200F? Thanks for any help/advice.
