The only time I figured mileage on a mostly highway trip was when I had my 3.73s and stock tranny. I got 24.9 mpg getting on it a couple times (ran into an ACR SRT 4 that thought he was a badass - he wasn't).

Haven't done it with the new setup yet (4.10s in the Moser, heavy driveshaft, and a GTO tranny with shorter gears), but it's definitely worse mileage than before the swap. I sit at 2250 RPM or so at 70 mph. On the old setup, it was below 2000 at 70.

With the stock tranny and gears, cruising 60 mph (give or take) on the highway in sixth with cruise control on, I could see someone pushing 30 mpg. Cruise control helps a lot with gas mileage.

When I was on the stock 3.42 rear I saw 31 mpg on a trip to the bay area. I haven't taken a long trip on the new rear and gears though.

Last time I checked, I got 28mpg in 6th with a mild H/C and full bolt-on combo (stock 3.42's though).
