Default Problems on dyno

Here's the sitchation...I'm new to tuning with a computer and I've gotta 5.7 head/cam motor on the dyno. 300cfm heads, small hydraulic roller (225) Stock flash file with anti-theft removed, rev increased to 7000. Motor will pull 440, then lose 400. After reflashing the pcm with the same program, it'll jump up to 440 again. What is happening? What is the computer learning and how can I turn that off? Any help would be nice..

Figured it out!! It was the f-in power to the fuel pump. Flipped the battery charger to high before a pull and boom..450 all the way to 6800
