Not sure if it is ok to do this...But check with
A D Performance (bought the wifes kit for under a grand)
Stoker kits .com kits under a grand
Flatlander has lots
There is a place out of Nevada I buy alot of kits from also
Mod's if this is wrong just let me know. Not sure of any sponsors that carry just kits.

I noticed that Scat is cheaper, but as far as quality goes how are they? I was looking at a Scat forged 3.75 competition crank, scat 6.0 forged h beam rods and JE pistons!?!?

Thanks guys, i think i'm going to go with the Scat combo. As long as they are reliable thats all that counts for me! Then if i end up doing a nitrous setup later on i will probably change everything again!

Cola forged steel stroker crank (3.75); Manley H-beam forged rods (6-inch); JE Forged nitrous pistons (4.060) bore; all in a factory Corvette 4 bolt main block. Compression is ~11.1
That's what I have.
My opinion is that you should just do an LS7. If you've decided on building an LT1, a basic performance stroker kit should be fine.
