I haven't done too much on mine (recently, just floor mats, drained some windshield washer fluid, fuel rail covers) but there are things you can do if you're serious.
Passenger seat, lightweight battery, lightweight wheels and tires (skinnies on the front), carbon fiber hood, headers/no cats saves weight and some cat backs are lighter too.
