A c6 z06 brake conversion I've heard is not worth the trouble.
c5 brake conversion is more than enough to work well for higher speed road racing. The c6 brakes I think require 18 inch wheels.

C6 Z51 brakes are .5" bigger and require 18" wheels. Both use the same C5 brake adapters.

C6Z brakes are awesome. They aren't in the same league as Brembos or Stoptechs, but they are far better than base C6 brakes. If you run track events and are looking for a "racing brake" setup, save your money for the good stuff. But if you are just looking for a great street setup, and are willing to pay, the C6Z brakes are perfect. Easy to find, easy to install. There is only one pretty significant problem...they are just about the fattest calipers made, so wheel fitment is a big issue. 18" is the minimum, and they have to have ample spoke clearance. For reference purposes - C5s, C5Z06s, C6s, Ruff 278's, TSWs, AR Rebels, and all TT designs WILL NOT fit these brakes. C6Z wheels (obviously) will. Other than that, I don't know of any non-custom forged wheels that will fit them.
The C6 Z51 setup is a great alternative, and half the price. It should fit just about any wheel 17" and larger.

C5 and base C6: 17"
C6 Z51: 18"

In that case, you need a C5/base C6 setup. The only difference is the C6 calipers are a tad stronger due to a slightly different casting. Quite frankly, the difference is marginal and I would go with whatever you could find quicker/cheaper.

No, that's not right at all. The pads are the same. The rotor is 1/2" further out and that puts it really really really close (or touching) the wheel.

I'm still confused. You're saying that to run a Z51 rotor, I'd need a different caliper bracket that moves the caliper farther out (toward the rear of the car)? Or are you saying that the rotor is somehow further away from the centerline of the car? The position of the caliper should be the same for all C5/6 front brake conversions regardless of the rotor size (12.8 or 13.4), right?

The only differences: bigger rotor, and the pad bracket bracket moves the caliper out 1/2" further from the center of the hub.

So there is a Z51 specific caliper bracket and a "base" caliper bracket? The caliper position, relative to the spindle, is different for a Z51 versus a base C5? I find that hard to believe. A Z51 rotor won't fit my C6 front brake setup?

We need to be clear about what brackets we are talking about. The adapter brackets (whether they be UMI, Kore3, Bishop...etc) are all the same. Either bracket will work for C5, C6, Z51, Z06 brakes. The difference in these brakes is their "Pad Abutment Bracket" or PAB as we enthusiasts refer. The PABs for C5, C5Z06, and C6 brakes are identical. Those PABs will fit C5, C5Z06, C6, and (from what i'm told) even f-body calipers. Now the Z51 brakes use the standard C6 calipers with a bigger PAB, which moves the caliper out 1/2" radially. It is still the same C6 caliper, just a different position created by the larger PAB. The C6Z06 brakes are fixed calipers and do not utilize PABs.

If you have C5/base C5 PAB's, then no, a Z51 rotor absolutely, positively won't fit. If you have C6 Z51 PAB's, then a Z51 will fit.
